Aano Baraawe (Somali Caramel Fudge) is a traditional Somali recipe for a classic sweet (candy) of milk, milk powder and sugar flavoured with cardamom that's boiled together, cooled until set and cut into square or diamond shapes. The full recipe is presented here and I hope you enjoy this classic Somali version of: Somali Caramel Fudge (Aano Baraawe).
Add the milk to a pan and bring to a boil over medium heat. Immediately reduce the heat then stir in the sugar until dissolved. Bring to a simmer and cook until the mixture begins to thicken (about 20 minutes) then stir in the milk powder and whisk until smooth.
Continue cooking until the mixture turns a caramel colour then whisk in the cardamom powder. Take off the heat then turn into a well greased baking tin and set aside to cool. Cut into squares or diamonds, wrap in greaseproof paper and store.
