Torrwch y siwet yn fân cyn ei gymysgu â’r blawd plaen a’r defnyddiau sych eraill. Gwlychwch y cyfan â llefrith, cyn ei dylino’n does sych. Rhannwch y does yn bedwar neu chwe darn cyfartal, a’u llunio’n beli crwn rhwng y ddwy law. Gollyngwch a peli yn ofalus i lond sosban o ddŵr berw a’u berwi am ryw ugain munud. Tynnwch o'r badell cyn ysgeintio siwgr coch drostynt a’u bwyta’n gynnes.

English Translation


This is a 19th century recipe for boiled curranty suet dumpling, the fore-runner of later steamed suet puddings. Think small versions of Welsh Pwdin Clwt or Scottish Clootie Dumplings.

Ingredients:

165g (6 oz) plain flour
60g (2 oz) suet
60g (2 oz) currants
a pinch of salt
milk, as needed

Method:

Shred the suet finely and work into the flour together with the other dry ingredients.

Bind with a little milk to make a stiff dough.

Divide the dough into four or six equal parts and form into medium size balls between your palms.

Drop gently into boiling water and boil for some twenty minutes.

Drain, scatter brown sugar over them and serve warm.
