English Translation

This is another fruited tea-time cake related both to bara brith and Torth Fraith but using milk as the combining liquid.

Ingredients:

300ml milk
120g butter
180g brown sugar
240g dried fruit
1 tsp mixed spice
1 tsp bicarbonate of soda
300g self-raising flour
1 egg

Method:

Combine the milk, sugar and the fruit in a saucepan and bring to a boil. Boil for 10 minutes before taking the pan off the heat. Beat in the bicarbonate of soda and set aside to cool.

When the mixture is cold beat in the egg and the flour. Transfer the mixture to a well-greased 1kg loaf tin and transfer to an oven pre-heated to 150°C. Bake for about 90 minutes, or until the top of the loaf is nicely browned and a skewer inserted into the centre of the cake emerges cleanly.

Allow the torth fraith to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
