This is a traditional rustic shortbread incorporating rice flour as well as wholemeal flour that, traditionally, was served to the guests at a Noswaith Lawen (Merry Evening).

Ingredients:

225g (8 oz) butter
335g (12 oz) wholemeal flour
115g (4 oz) rice flour
225g (8 oz) sugar

Method:

Cream the butter in a bowl until soft, sift the wholemeal flour over it and work it into the butter.

Add the sugar and rice flour and knead well to a soft dough.

Divide the dough into four equal parts and shape into flat rounds.

Prick the surfaces lightly with a fork and pinch the edge of each one with a thumb and forefinger.

Place on a shallow tin or baking tray and bake in a moderately hot oven (180C/355F) for approximately half an hour.
