Teisen De (Tea-time Cake)

Teisen De (Tea-time Cake) is a traditional Cymric (Welsh) recipe from the slate mining community of Ffestiniog for a classic but simple tea-time cake typically served with a cup of tea. Rhwbiwch y menyn i fewn i’r blawd nes fod y gymysgfa few briwsion ac yna ychwanegu’r siwgwr, powdwr codi a’r halen. Curwch yr ŵy yn dda a’i ychwanegu at y gymysgedd ynghŷd â’r llefrith a’r sieri. Cymysgwch bobeth ynghyd yn ysgafn yna trosglwyddwch i dun torth wedi ei iro cyn trosglwyddo i bobty wedi ei gynhesu i 180C (160C ffan/355F/Marc Nwy 4). Craswch yn y popty am tua 20 munud, nes fod pen y deisen yn euraidd a bod chigwainf wedi ei suddo i gannol y deisen yn dod allan yn lân. Gadewch i'r deisen oeri yn y tun am 10 munud cyn trosglwyddo i resel gwifren i oeri'n gyfan gwbwl. Tafellwch cny gweini. Roedd hwn yn arferol yn cael ei weini wedi ei daenu â menyn a gyda phaned o de.

English Translation


My family history covers all the major historical industries in Wales: agriculture, coal mining and slate mining. So, to celebrate the slate mining side, here's a recipe for a tea cake (ie a cake to be served with a cup of tea) from Ffestiniog. This is a fairly simple cake, without spice but flavoured with a little sherry.

Ingredients:

225g (½ lb) of wholemeal flour
1 tsp of baking powder
90g (3 oz) of butter
3 tbsp of milk
1 egg
6 tbsp of sugar
A pinch of salt
3 tbsp of sherry

Method:

Rub the butter into the flour until the mixture resembles breadcrumbs, then add the sugar, baking powder and salt. Beat the egg well and add it to the mixture along with the milk and sherry. Fold everything together gently then turn into a greased loaf tin before transferring to an oven preheated to 180°C (160°C fan/355°F/Gas Mark 4).

Bake in the oven for about 20 minutes, until the top of the cake is golden and a skewer inserted into the centre of the cake emerges cleanly. Allow the cake to cool in the tin for 10 minutes before transferring to a wire rack to cool completely. Slice before serving. This was typically served spread with buttered and accompanied by cup of tea.
