English Translation
This is a Welsh version of Hasselback potatoes, except that the slices in the potato are thicker and each slice is interspersed with a piece of bacon. This is a quick and cheap supper dish, to be served with fried eggs.
Ingredients:
4 large Potatoes, scrubbed clean
8 Spring Onions, sliced
4 Rashers of Bacon
4 tbsp butter
Salt and freshly-ground black pepper
Method:
Pre-heat your oven to 190C (170C Fan/375F/Gas Mark 5).
Taking each potato in turn, set them between two chopsticks. Using a sharp knife, cut through the potato stopping at the matchsticks so you have sliced the potato about 8 times. Repeat with the remaining potatoes.
Stretch the bacon rashers with the back of a knife and cut each one into 8 pieces. Slip one piece of bacon each into the slices in the potato.
Arrange the potatoes in a roasting tin, season with salt and black pepper then dot the top with the butter.
Transfer to your oven and bake for about 80-90 minutes, until baked through and just beginning to crisp.
