Dyma addasiad arall o gaws pop clasurol Cymreig, ble mae filedi o bysgod gwyn yn cael eu gorchuddio gyda cymysgedd caws pob cawslyd wedi ei flasu gyda bara lafwr.

Cynhwysion:

4 filed o bysgod gwyn
4 ffiled o bysgod gwyn (corbenfras a ddefnyddir yn draddodiadol)
100ml o lefrith cyflawn
25g menyn
25g blawd
75ml Cwrw
1 llwy de o fwstard grawn cyflawn
1 llwy fwrdd bara lawr
50g caws Caerffili/caws cheddar aeddfed
pupur du wedi malu, at flas

Dull:

Cynheswch eich gril yn boeth. Defnyddiwch i goginio'r pysgod nes eu bod yn frown euraidd ar bob ochr (tua 4 munud yr ochr). Toddwch y menyn mewn padell fach, yna cymysgwch i fewn y blawd a'i goginio, gan droi'n gyson am 1 munud. Chwisgwch y llefrith yn raddol, ac yna'r cwrw. Coginiwch, gan chwisgio drwy'r amser, nes bod y saws wedi twchu ac yn llyfn. Trowch y mwstard a'r bara lawr i fewn yna ychwanegwch y rhan fwyaf o'r caws a sesnwch gyda phupur du. Leiniwch yr hambwrdd ar gyfer y gril gyda ffoil, a'i iro'n ysgafn cyn gosod y pysgodyn ar ei ben, ochr y cnawd ar ei uchaf. Rhowch y cymysgedd rarebit dros y gymysgedd a'i wasgaru gyda gweddill y caws. Griliwch nes yn euraidd ac yn byrlymu.

English Translation


This is another twist on the classic Welsh rarebit, where white fish is topped with cheesy rarebit mixture flavoured with laverbread.

Ingredients:

4 fillets of white fish (haddock would be traditional)
100ml full-fat milk
25g butter
25g flour
75ml ale or beer
1 tsp wholegrain mustard
1 tbsp laverbread
50g Caerphilly/mature cheddar cheese
freshly-ground black pepper, to taste

Method:

Heat your grill (broiler) to high. Use to cook the fish until golden brown on all sides (about 4 minutes per side).

Melt the butter in a small pan, then stir in the flour and cook, stirring constantly for 1 minute. Gradually whisk in the milk, followed by the ale or beer. Cook, whisking all the time, until the sauce is thickened and smooth. Stir in the mustard and laverbread then add most of the cheese and season with black pepper.

Line the tray for the grill with foil, grease lightly then sit the fish on top, flesh side uppermost. Spoon over the rarebit mixture and scatter with the remaining cheese. Grill until golden and bubbling.
