Pwdin Briwfwyd (Mincemeat Pudding) is a classic Cymric (Welsh) recipe for dessert based on mincemeat wrapped in slices of bread and cooked in orange juice. English Translation
Ingredients:
4 slices of white bread
8 tbsp mincemeat
30g butter
1 dessert spoon of honey
freshly-grated zest of 1 orange
juice of 1 orange
chopped nuts
Method:
Remove the crusts from the bread then roll out with a rolling pin. Add the mincemeat to each slice of bread (about 2 tbsp each) then fold like sausage rolls.
Meanwhile mix together the butter, honey and grated orange zest. Beat together then spread over the rolled bread.
Place the orange juice in the base of a baking dish and set the rolled bread on top. Scatter a few chopped nuts on top then place the dish in an oven pre-heated to 140°C and bake for about 20 minutes. Serve immediately with cream or ice cream.
