English Translation

This is a classic boiled pudding, flavoured with handfuls (or more) of dried fruit (whatever is to hand, including nuts).

This pudding was served, fairly regularly, as a second course for the mid-day meal during the winter months in the Gower area.

Ingredients:

165g (6 oz) plain flour
60g (2 oz) sugar
60g (2 oz) fat (butter or lard)
300ml (1 1/4 cups) hot milk
1 tsp ground ginger
1/2 tsp baking soda
dried fruit, (your choice)

Method:

Melt the fat in the hot milk and pour gradually into the dry ingredients.

Mix together well and put the mixture in a greased basin.

Cover with greaseproof paper or cloth, tie securely and stand the basin in a saucepan half full of water.

Boil for approximately one and a half hours.
