Ingredients:

225g self-raising flour
125g butter, diced
125g caster sugar
2 eggs
150 to 300ml milk
1 tsp vanilla extract or almond extract

Method:

In a bowl, rub the butter into the flour until the mixture resembles breadcrumbs then stir in the sugar.

Whisk together the eggs, 150ml milk and the vanilla extract or almond essence. Work this mixture into the flour mix and add enough extra milk to give a batter about the consistency of double cream.

Heat a griddle or non-stick frying pan and when hot add the batter by the tablespoon. Fry until bubbles appear on the upper surface then turn over and cook until browned on the base.

Serve warm, with butter.
