Dyma'r fersiwn Cymreig o'r saig a elwir yn Yr Alban a Gogledd Iwerddon fel 'potted herring'. Rolio penwaig wedi'i bobi ochr croen yn outermost mewn cyfuniad o finegr a dŵr gyda sbeisys. Yna, caniateir oeri cyn gwasanaethu.

Cynhwysion:

6 penwaig ffres llond llwy de o sbeis piclo du peint o finegr nionod wedi’u tafellu ychydig o halen tua chwarter peint o ddŵr oer llond llwy de o driog du ychydig o flawd corn

Dull:

Glanhewch y penwaig yn y dull arferol, agor eu boliau a thynnu’r perfedd a’r llinyn arian allan ohonynt. Eu rhoi mewn dysgl bridd (neu enamel) a’u gorchuddio â’r finegr a’r dŵr. Ychwanegwch y sbeis, yr halen a’r nionod atynt i’w blasu. Toddwch y triog du mewn ychydig o ddŵr cynnes a’i dywallt dros y penwaig. Cymysgwch ychydig o cornflour mewn dŵr oer i wneud cytew tenau a’i ychwanegu at y gwlybwr yn y ddysgl. Coginio’r cwbl mewn popty araf am ryw awr nes bod esgyrn y penwaig wedi meddalu. ‘Roedd pennog picl a thatws wedi’u crasu yn y popty yn gwneud pryd blasus iawn i ginio neu swper.

English Translation


This is the Welsh version of the dish known in Scotland and Northern Ireland as 'potted herring'. Rolled herring baked skin side outermost in a blend of vinegar and water with spices. Then allowed to cool before serving.

Ingredients:

six fresh herrings
1 tsp pickling spice
600ml vinegar
onion, sliced into rings
a little salt
150ml cold water (approximately)
1 tsp black treacle
a little cornflour

Method:

Put the herrings (split open and cleaned in the usual way) in an earthenware dish and cover with the vinegar and water.

Add to them the spice, salt and onions. Dissolve the treacle in a little warm water and pour it over the herrings.

Blend the cornflour with cold water and add it to the liquid in the dish.

Bake in a slow oven until the bones have disintegrated.


Pickled herrings and baked jacket potatoes made a delicious meal for dinner or supper.
