Original Recipe
Dyma gyffug clasurol o Sir Benfro sydd wedi’i wneud â siwgr mân a llaeth cyddwys, yn y ffordd arferol, ond sydd â blas mêl arno.
Cynhwysion:
60g o fenyn
75g mêl Sir Benfro
4 llwy fwrdd o ddŵr
450g o siwgr mân euraidd
100ml o laeth cyddwys
Pinsiad o halen
Dull:
Cyfunwch y dŵr, siwgr mân euraidd a llaeth cyddwys mewn padell a chynheswch yn ysgafn nes fod y siwgr wedi toddi.
Ychwanegwch yr halen a’r mêl i'r sosban a’u berwi nes gyrraedd y can pelen feddal (pan mae ychydig o'r gymysgedd wedi ei ollwng i ddŵr oer yn ffurfio pêl sy'n teimlo'n feddal pan roliwch rhwng bys a bawd (114ºC [238ºF] ar thermomedr siwgr)). Tynnwch oddi ar y gwres a gadewch iddo oeri am ychydig funudau cyn ychwanegu'r menyn.
Curwch yn dda nes fod y gymysgedd yn troi'n yn drwchus ac yn hufennog yna arllwyswch ar unwaith i dun gwastad wedi ei iro â menyn. Torrwch yn sgwariau pan fydd wedi'i osod.
English Translation
This is a classic fudge from Pembrokeshire that's made with caster sugar and condensed milk, in the usual way, but which is flavoured with honey.
Ingredients:
60g (2 oz) butter
75g (3 oz) Pembrokeshire honey
4 tbsp water
450g (1 lb) golden caster sugar
100ml (2/5 cup) condensed milk
Pinch of salt
Method:
Combine the water, golden caster sugar and condensed milk in a pan and heat gently until the sugar dissolves.
Add the salt and honey and boil to the soft ball stage (when little of the mixture dropped into cold water forms a soft ball when rolled between finger and thumb (114ºC [238ºF] on a sugar thermometer)). Take off the heat and allow to cool for a few minutes then stir in the butter.
Beat well until the mixture becomes thick and creamy and pour at once into a buttered, flat tin. Cut into squares when set.
