English Translation

This is a classic cake of yoghurt dough with apple incorporated into the dough that's flavoured with cinnamon. This is an excellent moist cake that goes wonderfully well with a cup of tea or coffee.

Ingredients:

For the Cake:
125g of Natural Yoghurt
210g plain flour
2 tsp of baking powder
1/2 tsp baking soda
1/4 tsp of salt
150g of caster sugar
1 Red apple peeled and coarsely chopped
2 large eggs
1 tsp of vanilla extract
110ml of rapeseed oil

For the Cinnamon Topping:
50g of caster sugar
1 tsp of cinnamon
1 tbsp of melted butter

For the Glaze:
50g icing sugar
1-2 tablespoons of milk

Method:

Preheat the oven to 180C (160C fan/355F). Grease and line a 20cm (8") cake tin with greaseproof paper.

Add the flour, baking powder, baking soda, salt and sugar to a large bowl. Add the apple pieces and mix to combine.

In a separate bowl, add the eggs, vanilla, rapeseed oil and yoghurt and mix.

Add the wet mixture to the dry mixture stirring carefully with a wooden spoon until it is completely combined. But, be careful not to over mix. Pour the mixture into the cake tin.

For the cinnamon layer, mix the cinnamon, sugar and butter together, before pouring the mixture over the cake.

Transfer to the pre-heated oven and cook for about 30-35 minutes. Then, confirm that the cake is cooked by putting a skewer in the middle of the cake and seeing if it emerges cleanly.

Allow the cake to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.

Finally, mix the icing sugar with one tablespoon of milk until smooth. If the glaze is too thick, add one more tablespoon of milk. Pour over the cake after it has cooled. Allow the glaze to harden before slicing and serving.
