Briwfwyd (Mincemeat)

Briwfwyd (Mincemeat) is a classic Cymric (Welsh) for a traditional mincemeat of mixed fruit cooked with butter and rum that's stored in jars and which is typically used as a pie filling at Christmas time. Cynhwysion:

275g o ryfon
225g o gwrens
225g o afalau coginio, wedi eu gratio
450g o siwgwr brown meddal
125g o gnau Ffrengig wedi eu torri'n fân
sudd 2 oren
croen 2 oren, wedi ei ratio
sudd 2 lemwn
croen 2 lemwn, wedi ei ratio
225g o syltanas
125g o geirios chwerw, wedi eu torri
2 lwy de o sbeis cymysg
125g o fenyn
125ml o frandi neu rwm

Dull:

Cyfunwch y cynhwysion (ac eithro'r brandi neu rwm) mewn sosban fawr. Dewch a'r cyfan i ferwi a daliwch i ferwi (gyda chaead) am 15 munud. Tynnwch oddi ar y tan a gosodwch o'r neilltu i oeri yn gyfan gwbwl cyn ychwanegu'r brandi neu rwm. Paciwch y gymysgfa mewn jariau wedi eu sterileiddio a chaewch yn dyn gyda chaead. Fe wnaiff y gymysgedd gadw am i fyny i ddau fis.

English Translation


Ingredients:

275g raisins
225g currants
225g cooking apples, grated
450g soft brown sugar
125g walnuts, finely chopped
juice of 2 oranges
freshly-grated zest of 2 oranges
juice of 2 lemons
freshly-grated zest of 2 lemons
225g sultanas
125g sour cherries, chopped
2 tsp mixed spice
125g butter
125ml brandy (or rum)

Method:

Combine all the ingredients (except the brandy or rum) in a large pan. Bring the mixture to a boil, secure a lid, and continue boiling for 15 minutes.

Take off the heat and set aside until completely cooled before adding the brandy or rum and mixing thoroughly.

Pack the resultant mincemeat into cleaned and sterilized jars and secure the lids tightly. This mixture will keep for up to two months.
