Briwfwyd â Brandi (Brandy Mincemeat) is a classic Cymric (Welsh) for a classic mincemeat of mixed fruit, walnuts, Muscovado sugar, spices, butter and brandy that are soaked together and stored in jars; this is typically used for pie fillings at Christmas. Cynhwysion:

250g o fricyll sychion
250g o erllyg sychion
150g o ddarnau afal sychion
200g o eirin gwlanog sychion
100g o ffigys
100g o gwrens
100g o briwniau
225g o gnau Ffrengig, wedi eu torri'n fân
225g o swigwr Muscovado tywyll
2 lwy de o sbeis cymysg
2 lwy de o fenyn, wedi toddi
275ml o frandi

Dull:

Trorrwch y bricyll, gerllyg, afal, eirin gwlanog, ffigys a'r priwniau yn ddarnau. Cyfunwch mewn powlen gyda'r cwrens yna cymysgwch y sbeis a'r cnau Ffrengig i fewn. Toddwch y menyn mewn bain-marie (powlen am ben sosban o ddwr poeth) yna ychwaegwch i'r ffrwythau cyn arllwys y brandi ar bed popeth. Gadewch o'r neilltu dros nos i chwyddo'r ffrwythau yna ychwanegwch y siwgwr a throwch y gymysgedd yn drwyadl. Paciwch y gymysgfa mewn jariau wedi eu sterileiddio a chaewch yn dyn gyda chaead. Fe wnaiff y gymysgedd gadw am i fyny i ddau fis.

English Translation


Ingredients:

250g dried apricots
250g dried pears
150g dried apple pieces
200g dried peaches
100g figs
100g currants
100g prunes
225g walnuts, finely chopped
225g Muscovado sugar
2 tsp mixed spice
2 tsp butter, melted
275ml brandy

Method:

Chop the apricots, pears, apples, peaches, figs and prunes into small pieces. Combine these in a bowl with the currants then mix in the spice and the walnuts.

Melt the butter in a bain-marie (double boiler) then pour this into the fruit mix before adding the brandy and mixing in thoroughly. Cover with a cloth and set aside over night for the fruit to plump up. The following morning, add the sugar and mix thoroughly to combine.

Pack the resultant mix into cleaned and sterilized jars and seal securely with lids. This mixture will keep for up to two months if kept cool.
