Ingredients:
25g self-raising flour
225g granulated sugar
115g margarine
115g desiccated coconut
115g porridge oats
1/2 tsp salt
1 tbsp syrup
2 tbsp hot water
1 tsp bicarbonate of soda
a few cherries, quartered
Method:
Combine the dry ingredients in a bowl. Melt the margarine in a saucepan before adding the syrup and the hot water. Pour over the dry ingredients and beat until thoroughly combined. Tear off pieces of the dough and roll into balls about 3cm in diameter. Place these about 6cm apart on a greased baking tray and press down slightly so they stand in place.
Place in an oven pre-heated to 180°C and bake for about 6 minutes, or until golden brown. Remove from the oven and press a cherry quarter into the centre of each biscuit then allow to cool on the tray for 5 minutes before transferring to a wire rack to cool completely.
