Ingredients:

1 tsp golden syrup
130g butter
120g sugar
120g self-raising flour
50g desiccated coconut
75g rolled oats
2 tsp bicarbonate of soda dissolved in 1 tbsp hot water

Method:

Combine the syrup, butter and sugar in a large ban and cook on low heat until the mixture has melted and combined. Take off the heat and add the remaining ingredients, mixing well. Brig the mixture together as a dough then divide into 30 equal balls. Place these on a greased baking tray and flatten a little so they remain in place (allow at least 6cm between them).

Place the tray in an oven pre-heated to 160°C and bake for about 12 minutes, or until golden. Allow the biscuits to cool on a baking tray for 5 minutes then transfer to a wire rack to cool completely.
