Ingredients:
225g plain flour
pinch of salt
60g caster sugar
115g butter
1/2 egg
1 tsp baking powder
pink and white glacè icing
Method:
Combine the butter and sugar, creaming together until light and fluffy then add the egg and beat to combine. Add the flour and baking powder before beating until smooth. Turn the dough onto a floured surface and roll out to about 1cm thick. Cut into shapes and transfer to a well-greased baking tray.
Place in an oven pre-heated to 150°C and bake for about 10 minutes, or until golden. Allow the biscuits to cool for 10 minutes on the baking tray then transfer to a wire rack to cool completely.
When cold use a little of the icing to sandwich a pair of the biscuits together then decorate the top with the pink and white icing.
