Grenada Green Seasoning

As in most Caribbean countries you can't get away from green seasoning, an ubiquitous blend of herbs, onion and seasoning peppers with spices that's used as a basic marinade to flavour fish, pork and chicken. Here is the basic Grenadan green seasoning.

Ingredients:

4 large garlic cloves
4 spring onions, chopped
1 bunch thyme
1/2 bunch flat-leaf parsley or coriander
1 medium onion, chopped (about ¾cup)
4 seasoning (pimento) peppers
1 tsp ground turmeric
1/2 tsp ground allspice
1/4 tsp ground nutmeg
water, as needed

Method:

Combine the garlic, spring onions, pimento peppers and onion in a food processor or blender then pulse to chopped. Once chopped add the remaining ingredients.

Pulse to chop then run the motor until your have a thick, smooth, paste. Add water by the tablespoon as necessary to help the blending process.
