Dominica Titiwi Accra

Titiwi (also known as titiri, tritri, tri-tri), scientific species name Sicydium plumieri is a species of fish in the Gobiidae (goby) family. The immature form is a tiny translucent fish fry usually found near the river’s mouth. They are related to trout and salmon family but remain very small between 5-12cm. Titiwi follow the luna calendar, appearing near shore at certain times of the year. This tiny rather flavourless fish is often celebrated in Dominica and earned a reputation of being one of the principal ingredients in accra otherwise know in other Caribbean islands as fritters.

Ingredients:

120g titiwi
250g flour
600ml water
15g onion chopped
5g parsley chopped
25g spring onions chopped
5g thyme leaves
2 tbsp hot chillies chopped (or to taste)
1 tbsp ground turmeric
1 tsp ground black pepper
salt, to taste
1 tbsp garlic powder
1 tbsp baking powder
2 tbsp lime/lemon juice
750ml oil (for frying)

Method:

Place the titiwi in a bowl and rinse with a blend of lemon/lime juice and water then drain in a sieve.

Sift the flour in another bowl then beat in the water to form a smooth batter.

Add all other ingredients (including the washed titiwi) and stir to blend. At this point stir in the baking powder.

Heat the frying oil in your wok or saucepan (or use a deep fryer if you have one).

Using a scoop, take some of the batter and drop into the hot oil to fry. When it turns golden brown, turn it over to cook the other side.

When golden brown and cooked on both sides, remove with a slotted spoon or spider and transfer to a plate covered with kitchen paper to drain the excess oil.

Enjoy with plain or accompanied by your favourite sauce. Hot sauce or Dominican Spicy Guacamole would be typical.
