Dominica Curried Goat

Ingredients:

1kg goat meat, cubed
3 onions, chopped
4 tbsp flat-leaf parsley, chipped
4 tbsp coriander leaves, chopped
2 tbsp shadon beni (culantro) leaves, chopped
2 tsp fresh thyme, chopped
1 garlic clove, minced
1/2 red habanero chilli, minced (or to taste)
2 tsp salt, or to taste
225g carrots, chopped
2 tbsp colombo curry powder
1 tsp brown sugar
2 tbsp tomato ketchup
1 tbsp fat (butter or lard or coconut oil)

Method:

Place a pan over medium heat. Once hot add your choice of fat and use to fry the meat until nicely coloured on all sides. Add the onion and stir-fry the ingredients for 2 minutes. Scatter over and stir in the curry powder then season lightly with salt and black pepper. Stir fry for 90 seconds to cook then spices then pour in enough water to cover the meat. Bring to a simmer, cover and cook for about 90 minutes.

At this point add in all the remaining ingredients (including the carrots but excluding the herbs). Return to a simmer, top up the water if needed and continue cooking for about 20 minutes, until the carrots are tender.

Stir in the herbs and cook for 5 minutes more to wilt them.

Serve hot, with your choice of accompaniments.
