Farine is the leftover slightly coarse meal after cassava starch (semolina) is extracted and prepared. It's slightly nutty in taste and complements the smooth, mashed, avocado very well. For how to make your own farine, see the

Ingredients:
300g farine (set aside 50g)
750ml water
120g cassava flour
salt or sugar, to taste (depending on whether you want a savoury or sweet version)
Method:
Mix together the 250g farine, cassava flour and salt or sugar in a bowl. Add water and mix well until you have a dough-like consistency then divide into 8 pieces and roll these into balls.
Roll the balls with the palm of your hands, and flatten slightly into a disk. Pour the reserved farine onto a plate. Use this to cover the dough disks so they have a coarse outer texture.
Place on a hot heavy cast iron griddle pan over medium heat. Once the pan is hot, add the cassava dough, pressing down to flatten and roast on both sides until lightly browned.
Remove and serve.
